When ready to cook, start the Traeger on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 250 degrees F and preheat, lid closed, for 10 to 15 minutes.
Rub brisket with Dry Rub and ground coffee.
Place on grill grate fat side up, and smoke at 250 degrees F until it reaches an internal temperature of 160 degrees F (this should take about 4-5 hrs).
Remove brisket from grill and double wrap it in foil.
Return it to grill and cook until brisket reaches an internal temperature of 204 degrees F (about 2 1/2 - 3 hours).
Once finished, remove from grill, unwrap and let rest for 15 minutes. Cut and serve. Enjoy!
