Ingredients

  • 4 cod fillets about 6 ounces
  • salt and pepper to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1/2 cup dry white wine or chicken broth
  • 1/4 cup fresh lemon juice about 1 lemon
  • 2 tablespoons capers drained
  • 1 teaspoon lemon zest
  • 2 tablespoons unsalted butter cut into small pieces
  • fresh parsley chopped (for garnish)
  • lemon wedges for serving

Instructions

  • Preheat the oven to 200 degrees F. Lightly grease a baking dish large enough to hold the cod fillets in a single layer.
  • Pat the cod fillets dry with a paper towel and season both sides with salt and pepper. Place the fillets in the prepared baking dish.
