Heat large skillet over medium heat. Add olive oil, then mushrooms. (I like to use fresh sliced mushrooms.) Cook and stir mushrooms until they start to brown and caramelize, about 3-5 minutes.
Add butter, garlic, salt, pepper and Italian seasoning. Cook and stir about 1 minute.
Add wine and lemon juice. Continue cooking for about 2 minutes or until most of the wine has evaporated.
Sprinkle with chopped chives, continue cooking 1 minute.
Notes
If using mushroom buttons, brush the mushrooms clean. Keep the mushrooms whole, or if they are large, cut them in half.
