Totally delicious and moist orange flavor layer cake iced with a cream cheese frosting.

Ingredients
Cake
2/3c.Crisco
1tbsp.grated orange peel
1 1/2tsp.grated lemon peel
1 1/2c.sugar
3eggs
2 1/2c.sifted cake flour
2 1/2tsp.baking powder
3/4tsp.salt
2tbsp.orange juiceor lemon juice
3/4c.milk
Icing
1 4-ouncepackage cream cheese
1stick margarine
1box confectioners’ sugar
1teaspoonvanilla extract
¼teaspoongrated orange peel
Food coloring
Orange juice for thinning if necessary
Instructions
Cake
Combine Crisco, orange peel and lemon peel; mix well. Add sugar gradually; cream until light and fluffy. Add eggs one at a time, beat well after each.
Sift together flour, baking powder and salt; add to creamed mixture alternately with orange or lemon juice, then milk, a small amount at a time. Beat after each addition until smooth. Bake in two greased and floured 9 x 1 1/2 inch round cake pans in moderate oven (375 degrees) for 25-30 minutes. Cool. Frost as desired.
Icing for Fluffy Sunshine Cake
Icing
Cream together all ingredients until smooth. If too think, start by mixing in a tablespoon at a time of orange juice until spreadable.
