Ingredients
- 4 bone-in center loin pork chops
- 2 tablespoons grapeseed oil
- 2 tablespoons your favorite seasoning rub
- 1/4 cup butter
- 1 tablespoon minced fresh ginger
- 1 pound fresh peaches pitted and sliced *
- 1 tablespoon brown sugar
- 1/4 cup brandy
- 1/2 cup your favorite barbecue sauce
- 1/8 teaspoon ground cinnamon
- kosher salt and fresh ground black pepper
Instructions
- Preheat you grill.
- Slit the bone surfaces so the chops won't curl on the grill.
- Apply oil on both sides of pork chops and apply seasoning.
- In a saucepan set over medium heat, melt the butter.
- Add minced ginger and cook until softened.
- Stir in peach slices and brown sugar.
- Pour in brandy and ignite with a match. Allow the flames to die down naturally.
- Add the barbecue sauce and cinnamon to the mixture, seasoning with kosher salt and black pepper, to taste.
- Check the grill condition; if using charcoal, spread a nice even bed of coals.
- Place the seasoned chops directly on the coals.
- When juices rise to the surface near the bone, flip the chops.
- Continue to cook until the internal temperature reaches 135 degrees F to 145 degrees F.
- Ensure cooking time is between 8 to 10 minutes to avoid overcooking.
- Brush the chops with the barbecue sauce and serve with more on the side.

Technique tip: Slit the bone surfaces of the chops to prevent curling during grilling.
