Olga’s Melt in Your Mouth Chicken Breasts

Ingredients
- 4 boneless skinless chicken breasts, cut into large strips
- ½ teaspoon pepper
- 1 teaspoon garlic
- 1 ½ teaspoon seasoning salt
- 1 cup Parmesan cheese 1/2 cup for topping
- 1 cup Plain Greek yogurt or mayonnaise
- 1 cup milk to soak/marinade chicken breasts/strips
Instructions
- Cut each chicken breast into 3 large strips. Note: If desired, purchase chicken strips instead of whole boneless, skinless strips – then omit this step.
- In a medium size bowl, place chicken breasts/strips in 1 cup of milk or buttermilk
- and soak/marinade for 20 to 30 minutes before baking time or overnight. Marinating the chicken will result in extra juicy chicken.
- Preheat oven to 375 degrees F. Spray a 9x13-inch baking dish with Pam cooking spray.
- In a small bowl, combine the seasoning, ½ cup parmesan cheese and yogurt or mayonnaise until smooth.
- Place chicken into 9x13-inch baking dish and spread the mixture over the chicken breasts, coating well. Sprinkle with the remaining ½ cup parmesan cheese.
- Bake for 40 to 45 minutes, or until the juices run clear, or use a meat thermometer and bake cooked through or until the chicken reaches an internal temperature of 165°F.
