Lemon-Lime Scallop Canapés
These zesty Lemon-Lime Scallop Canapés bring an excellent citrus flavor to any tea. The Lemon-Lime Vinaigrette recipe is included in the recipe.
Servings 12 Canapés
Ingredients
- 12 large sea scallops
- ¼ teaspoon salt
- ⅛ teaspoon ground black pepper
- 3 tablespoons olive oil
- 1 tablespoon salted butter
- 2 cups chopped watercress
- 1 recipe Lemon-Lime Vinaigrette recipe follows
- 12 English water crackers
- Garnish: lemon zest and lime zest
Instructions
- Blot scallops dry on paper towels. Season with salt and pepper.
- In a large sauté pan, heat olive oil over medium-high heat. When oil begins to shimmer, add scallops, and let sit undisturbed for exactly 1 minute. Reduce heat to medium, turn scallops over, and let sit undisturbed for 1 minute. Remove from heat and add butter. Let butter melt, stirring to coat scallops in melted butter. Remove scallops from pan and set aside.
- Toss watercress with just enough vinaigrette to lightly dress. Divide watercress evenly among crackers. Top each cracker with a scallop. Lightly drizzle scallops with remaining vinaigrette.
- Garnish each canapé with lemon zest and lime zest, if desired.
- Serve immediately.
Lemon-Lime Vinaigrette
Ingredients
- ¼ cup extra-virgin olive oil
- 2 tablespoons fresh lemon juice
- 2 tablespoons fresh lime juice
- ½ teaspoon sugar
- ¼ teaspoon salt
- ⅛ teaspoon ground black pepper
Instructions
- In a jar with a screw-top lid, combine olive oil, lemon juice, lime juice, sugar, salt, and pepper.
- Shake vigorously until emulsified.
Notes
Make-Ahead Tip: Lemon-Lime Vinaigrette can be made a day in advance and refrigerated until needed. Let come to room temperature before using and shake well.
