Sicilian Meat Roll
Serve the meatloaf over pasta or zucchini noodles along with your favorite pasta sauce, some crusty bread and a tossed salad.

Ingredients
- 2 beaten egg
- ¾ cup Italian style bread crumbs
- ½ cup tomato sauce
- 2 tablespoons tomato paste optional
- ½ teaspoon salt
- ½ teaspoon crushed oregano
- 2 tablespoons parsley chopped
- ¼ teaspoon pepper
- 1 clove garlic minced
- ½ cup chopped sweet yellow onion
- ½ cup parmesan cheese
- 2 pounds ground beef
- 8 thin slices about ¼ pound honey baked ham
- 6 ounces about 1 ¼ cup shredded mozzarella cheese
Instructions
- Preheat oven to 350 degrees.
- In a large mixing bowl, combine all ingredients above except ham slices and shredded mozzarella cheese. With your hands, mix until everything is well combined. Take a Large sheet of parchment paper or aluminum foil and lay it on the counter. Place your meat mixture in the center and pat mixture to form a rectangle about 8x15-inchs. Top with slices of ham and then layer of shredded cheese, leaving 1-inch border all around. Starting at the 8-inch end, roll the meatloaf up, jelly roll style, using the parchment paper or tin foil to help guide you. Press down on top seams to seal and press the ends together to seal as well. Place on a baking sheet lined with either parchment paper or non-stick tin foil. Bake in preheated 350 degrees F. oven for 1 ¼ hours. Remove from oven, add additional cheese and tomato sauce on top if desired, and allow to rest for 10 minutes before slicing.
