COOL 'N EASY Pie

Ten minutes in the morning – luscious strawberry pie in the evening!
Ingredients
- 1 cup fresh chopped strawberries
- 2/3 cup boiling water
- 1 pkg. 4-serving size JELL-O Brand Strawberry Flavor Gelatin or any red flavor
- ice cubes
- 1/2 cup cold water
- 1 tub 8 ounce Cool Whip Whipped Topping, thawed
- 1 ready-to-use graham cracker crumb crust 6 ounces
Instructions
- Slice 1 cup strawberries; refrigerate for later use. Slice remaining strawberries for garnish; set aside.
- Stir boiling water into gelatin in large bowl at least 2 minutes until completely dissolved.
- Mix cold water and ice to make 1 cup. Add to gelatin, stirring until slightly thickened. Remove any remaining ice.
- Stir in whipped topping with wire whisk until smooth.
- Mix in chopped strawberries.
- Refrigerate 20 to 30 minutes or until mixture is very thick and will mound. Spoon into crust.
- Refrigerate 6 hours or overnight.
- Top with sliced berries just before serving.
Notes
The original recipe said to mix cold water and ice to make “1 ¼ cups”. I changed this amount to equal 1 cup as a result of my pie occasionally not thickening/setting up. So, I’ll leave it to you for the amount of cold water you use to add to the gelatin. I also saw a similar recipe on Allrecipe.com.
