Herbed Mushrooms with White Wine

Ingredients
- 1 ½ pounds fresh mushrooms sliced or buttons
- ¼ cup dry white wine
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- 2 cloves garlic minced, or chopped
- salt and pepper to taste
- 2 tablespoons chopped fresh chives
- 2 tablespoon butter
- 1 tablespoon lemon juice
Instructions
- Heat large skillet over medium heat. Add olive oil, then mushrooms. (I like to use fresh sliced mushrooms.) Cook and stir mushrooms until they start to brown and caramelize, about 3-5 minutes.
- Add butter, garlic, salt, pepper and Italian seasoning. Cook and stir about 1 minute.
- Add wine and lemon juice. Continue cooking for about 2 minutes or until most of the wine has evaporated.
- Sprinkle with chopped chives, continue cooking 1 minute.
Notes
If using mushroom buttons, brush the mushrooms clean. Keep the mushrooms whole, or if they are large, cut them in half.
