Sweet Potato Pudding

My Favorite Sweet Potato and Coconut Casserole recipe. It's sweet like a pumpkin pie.

Ingredients

  • 1 large can Chopped Yams
  • 1 cup Liquid from Chopped Yams
  • 1/2 Cup Sweetened Condensed Milk
  • 1 Egg Optional
  • 1/4 Cup Brown Sugar
  • 1/4 tsp Cinnamon
  • 1/2 Cup Shredded Sweetened Coconut
  • 2 tbsp Margarine
  • 1 cup Miniature Marshmallows

Instructions

  • Combine and mix all ingredients except coconut and marshmallows with hand mixer until smooth. Fold in shredded coconut. Place mixture in casserole dish and cover with the marshmallows.
  • Bake at 400 degrees for 45 minutes or until bubbly.
