Sweet Potato Pudding
My Favorite Sweet Potato and Coconut Casserole recipe. It's sweet like a pumpkin pie.

Ingredients
- 1 large can Chopped Yams
- 1 cup Liquid from Chopped Yams
- 1/2 Cup Sweetened Condensed Milk
- 1 Egg Optional
- 1/4 Cup Brown Sugar
- 1/4 tsp Cinnamon
- 1/2 Cup Shredded Sweetened Coconut
- 2 tbsp Margarine
- 1 cup Miniature Marshmallows
Instructions
- Combine and mix all ingredients except coconut and marshmallows with hand mixer until smooth. Fold in shredded coconut. Place mixture in casserole dish and cover with the marshmallows.
- Bake at 400 degrees for 45 minutes or until bubbly.
