Simple spices is all it takes to make your taste buds think they've hit the jackpot. Coffee grounds and Rib Rub are the perfect pairing for your brisket to smoke low and slow.

Ingredients

  • 1 7-10 LB Trimmed Brisket
  • 1/8 CUP Ground Coffee
  • 1/4 CUP Favorite Dry Rub

Instructions

  • When ready to cook, start the Traeger on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 250 degrees F and preheat, lid closed, for 10 to 15 minutes.
  • Rub brisket with Dry Rub and ground coffee.
  • Place on grill grate fat side up, and smoke at 250 degrees F until it reaches an internal temperature of 160 degrees F (this should take about 4-5 hrs).
  • Remove brisket from grill and double wrap it in foil.
  • Return it to grill and cook until brisket reaches an internal temperature of 204 degrees F (about 2 1/2 - 3 hours).
  • Once finished, remove from grill, unwrap and let rest for 15 minutes. Cut and serve. Enjoy!

Notes

Chef Tip: Cut meat against the grain as it will be much more tender.
Note: If you wrap the cooked, foil wrapped brisket in a couple of towels and place in a good cooler, it will stay hot for a few hours.
