Instructions

  • In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated and the mixture holds together when pressed, resembling wet sand.
  • Firmly press the crumb mixture into the bottoms and up the sides of mini tart pans with removable bottoms or a muffin tin lined with paper liners. Ensure the crusts are even and compact.
  • Chill the crusts in the refrigerator for at least 15 minutes to set, allowing them to achieve a firm texture.
  • In a separate bowl, whisk together the sweetened condensed milk, key lime juice, and lime zest until smooth and well combined, which should take about a minute.
  • Pour the lime filling into the chilled crusts, filling each mini pie almost to the top. Be careful not to overfill; leave a little space for garnishing later.
  • Refrigerate the pies for at least 2 hours to allow the filling to firm up beautifully, as this chill time is crucial for the right texture.
  • While the pies are chilling, beat the heavy cream and powdered sugar together in a mixing bowl until stiff peaks form for your lovely whipped cream topping.
  • Before serving, garnish each mini pie with a dollop of whipped cream and a sprinkle of lime zest for a fresh, vibrant touch.

Notes

For an extra burst of flavor, consider adding a drop of green food coloring to the lime filling for a more vibrant look.
*If you can't find key limes, regular lime juice works as a substitute but may alter the tanginess slightly.
