Orange Tea Cookie

Ingredients
- 1 12-ounce package vanilla wafers
- 1 ¾ cups confectioners’ sugar divided
- 1 cup chopped pecans
- ½ cup unsalted butter melted
- ½ cup frozen orange juice concentrate thawed
Instructions
- In a work bowl of a food processor, pulse wafers until crumbly. In a large bowl, combine wafer crumbs and 1 ¼ cups confectioners’ sugar. Stir in pecans.
- In a small bowl, combine the melted butter and orange juice concentrate. Add butter-juice mixture to crumb mixture and stir well to combine. Refrigerate for 1 hour.
- Form dough into bite-size balls. Spray the bottom of a drinking lass with nonstick spray and gently flatten cookies. Dust lightly with remaining confectioner’s sugar. Store refrigerated.
Notes
I like to roll the bite-size balls in coconut rather than flattening and dusting with powder sugar. Then I layer the balls in an airtight bowl, separating each layer with parchment paper, and store in the refrigerator. These are delicious!
