Crispy Oven Baked Chicken Breasts

Ingredients

  • 1 cup all-purpose flour
  • 1 cup Argo® Corn Starch
  • 1 cups Progresso™ Italian Style Panko crispy breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • Add spices as desired I like to use garlic powder, salt, pepper, and McCormick Original Chicken Seasoning
  • 4 boneless skinless chicken breasts OR 1 ¼ pound chicken breast tenders from 2 14-ounce packages

Instructions

  • Heat oven to 425°F. Line cookie sheet with foil; spray with cooking spray.
  • In shallow dish, place cornstarch. In another shallow dish, beat egg and water. In third shallow dish, mix flour, grated parmesan cheese, spices and Italian style panko breadcrumbs (I’ll call this the bread crumb mixture).
  • After seasoning your chicken breasts with garlic powder, McCormick Original Chicken Seasoning, salt and pepper; coat the chicken with cornstarch.
  • Dip into egg mixture, then coat with the bread crumb mixture. Place on cookie sheet.
  • Bake 15 to 20 minutes, turning once, until chicken is no longer pink in center and coating is golden brown. Chicken should reach an internal temperature of 165 F.
  • Serve with dipping sauce.

Notes

Before you dip your chicken breasts in the batter, dredge them in cornstarch first. In addition to improving the crispiness of your chicken, the cornstarch also improves adhesion of the batter to your chicken, according to the American Meat Science Association.
